Strawberry Porridge

A healthy, fruity strawberry porridge recipe inspired by strawberries and cream. Comes together in minutes and is entirely refined sugar free.

Ingredients

  • 100 g porridge oats
  • 2 tbsp freeze-dried strawberry powder
  • 2 tsp unpasteurised honey
  • 1 tsp pure vanilla extract
  • ¼ tsp fine sea salt
  • 250 ml plant-based milk
  • 250 ml water
  • ¼ tsp beetroot powder, for colour (optional)
  • Single cream, for topping
  • White chocolate chips, for topping
  • Fresh strawberries, for topping

Method

  1. To a saucepan add the oats, strawberry powder, honey, vanilla, salt, milk, water, and optional beetroot powder. Stir everything together well with a wooden spoon or whisk and then place over a medium heat.

  2. Continue to stir the oats frequently as the mixture heats up. Once it begins to bubble, turn the temperature down to low and continue cooking until the porridge reaches your desired consistency (about 5-6 minutes).
  3. Divide the porridge into two bowls and top with a drizzle of cream, white chocolate chips, and fresh strawberry slices. Serve immediately.

Notes

  • If you can’t purchase strawberry powder, you can pulverise freeze dried strawberries in a mortar and pestle to achieve the same result.
  • The honey can be replaced with agave syrup or maple syrup in this recipe.
  • If you need a little bit more protein in the mornings, you can add up to 15 grams of your favourite unflavoured protein powder to this recipe for a boost.
